Cook Time: 8 Minutes
Cool and let set for at least 3 Hours in the refrigerator
Yields: 4 (4-oz.) Servings

1/4 cup cold water

3 teaspoons unflavored gelatin powder

3 and 1/4 teaspoons of instant coffee (I use decaffeinated instant coffee)

2 cups of water

3 packets of saccharin sweetener, or 2 Tablespoons granulated sugar

Reddi Wip Original Whipped Topping Made with Real Cream


1.) For this recipe, place the 1/4 cup of cold water in a small bowl. Then add the 3 teaspoons of unflavored gelatin powder; stir well with a spoon, then set this aside for now.

2.) Now place the 2 cups of cold water in a small saucepan, over medium-high heat on top of the stove. Bring to a boil, then add the instant coffee granules and sugar; stir well with a spoon, then set this aside to cool for 15 minutes.

3.) Add the gelatin mixture to the coffee-sugar mixture, and stir thoroughly until it looks well combined.

4.) Now pour the coffee gelatin mixture into 4 individual serving bowls and place them in the refrigerator for at least 3 hours. Then top the coffee flavored gelatin with a generous amount of Cool Whip or Reddi Wip.

Well it is Friday again. Seems like we just had it. This morning I am planning on making more keto shakes to put in the freezer for ice cream. Plus working on that never ending paper pile again. And dusting........need to remember to add that to my list. Feels like a warm day so far.

Yesterday morning, I looked up from my computer and thought I saw something outside my window. I went to it, and there were two pigeons on the sill! When they saw me they flew away. I would have liked to get a picture of them but they would not stay. I have watched a few videos lately about pigeons because there are 4 who live outside our building. They mate for life so this must be two couples.

I need to get some groceries but will wait and maybe do that tomorrow.
