3 Ingredient Peanut Butter Cookies

These 3 Ingredient Peanut Butter Cookies are quite delicious!
I've prepared these cookies twice and used two different brands of peanut butter.

3 Ingredient Peanut Butter Cookies

Prep Time: 5 Minutes
Cook Time: 8 Minutes
Yields: 18 Cookies

1 cup creamy peanut butter (I used Hampton Farms Creamy Peanut Butter.)
1 cup granulated sugar
1 large egg

1.) Lightly grease a couple of baking pans with a bit of Crisco All Vegetable Shortening. Then preheat the oven to 350° F.

2.) In a medium-sized bowl, add the peanut butter, granulated sugar, and egg. Mix until smooth and all ingredients are well combined.

3.) Using a small cookie scoop (or a spoon), scoop up about 1 Tablespoon of the cookie dough, shape cookie dough into round balls, and place on prepared baking sheet. Be sure to space cookie dough about 1-1/2 inches apart.

4.) Delicately press the cookie dough with the prongs of a fork, to slightly flatten the cookie dough. (See *Note below.)

5.) Place the baking pan in the oven and bake the cookie dough for 6 to 8 minutes. (I baked mine for 7 minutes, then immediately removed the baking pan from the oven. The cookies are done when the bottoms barely begin to brown.)

6.) Remove the baking pan from the oven and allow the cookies to cool for 5 minutes. Then transfer cookies to a wire rack to cool completely.

7.) *Note: The last 2 cookies I did not flatten them with a fork, and I only baked them for 7 minutes, and removed them from the baking pan immediately after I took them from the oven.

8.) **Additional Note: I did want to mention, the Hampton Farms Creamy Peanut Butter, has less salt, less sugar, and less fat. Both my husband and I really enjoy it!

These are a great starter recipe to help get young children interested in cooking.

All they need is a bit of help getting them in and out of the oven.
Same with the Peasant Bread recipe. A great introduction to making home-made bread and a great motivator, too, because it's as yummy as it is easy.

Cup of sugar in 18 cookies is a lot of sugar isn't it?

Naturally, yes, a cup of sugar indeed is a lot of sugar. And since I am Type 2 Diabetic, I only eat one cookie. One cookie is better than not having any. Plus placing them in the freezer is a good way to make them last longer. I especially find the 3 Ingredient Cookie Recipes are a quick and easy way to make cookies. I especially like that!​

 
Same with the Peasant Bread recipe. A great introduction to making home-made bread and a great motivator, too, because it's as yummy as it is easy.

Murrmurr, I hope you enjoy baking these cookies as much as I did. While these were one of my favorite cookies to make and eat. My husband especially enjoyed the 3 Ingredient Honey Flavored Peanut Butter Cookies. Which surprised me.​

Thanks for posting, I have jar of pb, over a year past the expiration date which I will be happy to get rid of...LOL
Happy Heart, my jar of peanut butter was 3 months past the expiration date, and it still tasted good. So, I was able to male 2 versions of the 3 Ingredient Peanut Cookies.
 
I made these cookies a few days ago.

Really easy and really good!!

They're sweeter than the normal recipe, which is fine, but when I make them again I'm gonna use 1/2 regular sugar and half brown sugar, and see how that goes.

One of our discount stores in town sells creamy peanut butter at a "good price", my husband stocks up on peanut butter. I especially enjoy a Peanut Butter & Banana Sandwich.

My daughter-in-law has insulin-dependent diabetes and uses Stevia. The cookie recipe won't turn out because Stevia is not a good substitute for granulated sugar in baking. She's tried it. But so has the company that makes Stevia, and they made a Stevia product that you can use for baking. It's on the same shelf, you just have to check the label. (not sure if all grocery stores carry it, tho)

My brother loved P.B, mayo & pickle sandwiches...I tried it - not bad but I would rather have a BLT.
 
I have a similar recipe with 3 basic ingredients (more are optional)

1 - 14 oz can sweetened condensed milk
3/4 cup peanut butter (any type)
2 cups baking mix (Bisquick)

optional ingredients
1 tsp vanilla
sugar
chocolate kisses

  • Preheat oven to 375ºF. Line a baking sheet with parchment paper.
  • Stir together sweetened condensed milk and peanut butter until smooth. Stir in Bisquick and optional vanilla.
  • Scoop dough into 1 Tablespoon balls. Roll in sugar and place on baking sheet.
  • Flatten in crisscross pattern with a fork. (It helps to dip the fork in sugar to keep it from sticking to the dough.)
  • Bake 8-10 minutes.
  • If making Peanut Butter Blossoms, do not flatten the cookies. Leave them as balls and bake. Remove the cookies from the oven and immediately press a chocolate kiss onto the top of each cookie.
  • Remove cookies from sheet to wire rack to cool.
