beef nachos

Obviously, people have widely varying tastes and a widely varying desire for really hot/spicy food.
The following is not too hot/spicy. But it still has a good flavor. If you like your nachos to be like spicy hot fire, feel free to add as many cooked jalapenos as you prefer.
Also, the amounts depend upon how many you are feeding. This recipe feeds two very hungry people or 4 "snackers"
Note: I don't personally care for soggy tortilla chips. However, many, many recipes call for meat and beans to be poured over the tortilla chips before baking. That is NOT my style. I like my chips to be crispy. My recipe gives me nice crispy tortilla chips.
this recipe is designed for the home cook and ease of prep.
needed: one 8X8 or 9X9 pyrex dish
So, with that said, here goes.

3/4 lb ground beef
I cup, chopped onions
2 tsp fresh garlic , finely chopped
1 pkg of Taco seasoning mix
1 cup of your favorite salsa (smokin' hot if you prefer)

1 can of refried beans
**************************
1 Package of Tortilla chips
**************************
Sharp cheddar cheese and/or Monterrey Jack cheese (I use both)

Cook beef and stir it around until it is broken up and lightly browned.
Drain excess fat if any.
Add pkg of taco seasoning and1/4 cup water
add 1 cup of your salsa.
Add onions, turn heat down to low, cover and cook until onions are soft/wilted and sauce has thickened.
Turn heat off Keep covered.

Heat refried beans

Place a few handfuls of tortilla chips on a flat oven sheet. (NOTE: be sure they over lap. Important !)
Shred desired amount of cheese directly on the tortilla chips. Set aside.

Spoon refried beans into a 9X9 inch pyrex dish, Spread out.
Spoon meat on top of refried beans. smooth out.
Place dish into hot oven and heat for 10 minutes
when meat and beans are hot, remove from oven and put your cheese covered tortilla chips in oven for aprox 2 minutes.
The cheese should now be melted.
Using a spatula, move cheese covered tortilla chips on top of the hot met and beans.
serve immediately.
Enjoy :giggle: ******** If there are any leftovers, discard the tortilla chips and freeze meat/bean combo until needed again.

Depending upon my mood, my favorite cuisine varys.
Sometimes I wake up in the morning and I'll have a very specific taste in my mouth. I can't rest until I start work on the recipe. One day it might be lasagna; a week later it might be Hungarian beef goulash. Probably the result of never having enough food as a kid.

I love Nachos but personally I like Chorizo on it instead of beef and taco seasoning (chorizo is already got a uniquely delicious flavor). I like to add fresh avocado and a just a touch of sour cream too. Nachos is difficult and messy to eat, especially when the chips start all sticking together as the cheese cools...but well worth the effort! They are also best shared with someone because portions are usually huge.
