Beets; powerhouse of nutrients !

I have always enjoyed beets, but beyond that had not considered them as one of the "Powerfoods" per se. However, i was reading this article about how many different vitamins and other nutrients there are in the beet root. Even the tops are packed full of healthy vitamins and minerals. And they are an easy vegetable to grow !
The ancient Romans knew just how healthy beets are, and then enjoyed beets in their diet, and even considered the beet to be an aphrodisiac. It is also an anti-inflammatory food; so it would be of great benefit when a person is suffering from a bout of arthritis, or other inflammatory condition.

The best way to eat them is juice them....greens and all. Canned beets have very little nutrients left. Next best thing is to steam or bake them.

Yes! Another juicing enthusiast! I can't stand beets but always added them to my daily concoction when I was a juicing madman. Gotta get back to it.
 
I have always really liked beets, and especially love the pickled beets. Now that I have been working on having more raw foods in my diet, and drinking green smoothies; I was thinking that maybe beets would be good in a smoothie, and they add such a pretty color as well.
Here is a recipe that I found for a fresh beet smoothie. I haven't tried it yet, but next trip to the store, I am going to get a few beets and try this one out.

I love steamed beets and pickled beets. I have beet seeds now and they will be planted in our small
garden as soon as it`s warm enough. Last year they did well in the garden and it was nice to go out
and get them in the backyard. The greens when young and tender are good too.

I went to the store and bought some fresh beets for the beet smoothie. I forgot to get the ginger. But, I added beetroot, beet stems and tops, pineapple, and some apple into the blender, and then put in some cranberry juice for liquid, and blended the whole thing up. It was beautiful, bright (almost fluorescent) scarlet red, and tasted delicious ! !
I had carrot, but forgot to put that in, so next time, I am going to get a bit of carrot in the smoothie as well, but it was wonderful just as it was. I have actually never tasted raw beet before that I can remember, but I like the taste that it added to the smoothie.
I ordered more beet seeds to plant in my garden (I planted one packet already), and hope to enjoy the beets and their greens once they start to come up and grow.
This is definitely a smoothie that I would recommend to everyone who enjoys beets ! !
