Black Bean Brownies

Black Bean Brownies.....Good for what ails ya

1 15 oz can black beans, rinsed and drained
2 Tbsp cocoa (unsweetened powder)
1/2 c quick (1 min) oats
1/4 tsp salt
1/3 c maple syrup
1/2 tsp stevia (I used Stevia in the raw)
1/4 c extra virgin coconut oil
2 tsp vanilla
1/2 tsp baking powder

2/3 c dark chocolate chips/bits
Optional: 1/2 c walnuts or pecans

Process all except choc chips and nuts in food processor until very smooth, scraping down sides in between mixing.
Stir in choc chips and nuts, if using.

Bake in a greased 8" square pan at 350 for 15-18 mins
 

hearlady that sounds good and something I can eat on my gluten free diet. I have to see if I can get gluten free quick oats though. Oats do not contain gluten but are always followed by a crop of wheat. Sometimes the wheat gets mixed in with the oats. That is why I can only use oats that say they are gluten free. I probably could use my gluten free regular oats and process them until finer. It has worked before.Thanks for the recipe. I never made any baked goods using black beans.
