I've discovered a new breakfast. I like them easy and quick, but filling to. If they're portable so much the better, as typically I'm running out the door, eating on the fly. It's been a challenge to find things that are low carb, filling, quick, and portable, but here's my latest.

A slice of multi grain low cal bread (which is incidentally lower in carbs because the net carbs are less after subtracting the fiber from the total carbs) on which I've put a slice gouda cheese (Kroger makes sliced gouda in convenient bread sized slices) and two slices of thin cut deli ham, either smoked or honey, both are delicious! Nuke it for 15 seconds to get the cheese all melty and warm up the ham, and it's done.

It uses up more of my carb allotment for the day than just a pure protein breakfast, but is sure is delicious!!

Joseph's lavash will help save a few carbs a quarter slice is 30 calories and 3 net carbs.
 
Those crossant breakfast boats look delicious! Since we can't watch the video, can you write out the recipe? YUM!
They DO look good! We have potluck brunch at church once a month. I added these to my rotation.

Croissant Breakfast Boats

4 large croissants

5 eggs
2 TB milk

1 cup shredded cheddar cheese
6 strips bacon, fried and crumbled
3 TB chopped chives or green onions
Salt & pepper to taste.

Preheat oven to 375°

Cut out the centers of the croissants so as to form a long canoe/shell.
Place on parchment-lined cookie sheet. Toast in oven for 5 minutes.

Put the eggs and milk in a bowl. Beat.
Add cheese, bacon, chives salt & pepper. Mix together.

Spoon mixture into the croissant boats.
Bake 20-25 minutes until the mixture has set.
 
I don't do breakfast, but I occasionally make my own version of "Hot Pockets" with canned Pillsbury (or store-brand) crescent rolls. You can have whatever fillings you like, plus not all the preservatives etc. that's in regular Hot Pockets.

It takes 4 crescents to make each pocket. Place two together on cookie sheet, add filling, and place 2 more on top. Seal, but not tightly. Pop into oven and bake for 10-12 minutes.
If you want a quick breakfast, a good filling is scrambled eggs with chopped sausage or other meat and cheese- cook it as usual on stovetop in frying pan first.
From my experiences, one serving is a hearty, filling meal.

Oh, You're scrambled eggs with chives or onions, shredded cheese and peppers in a tortilla? I do that too! Mexican food is my favorite! So, Anything with tortillas I'm in! I add salsa though!
 
Yeh, when I buy a pack of tortillas and have them hanging around, it seems that all sorts of stuff ends up inside of them. Being in New Mexico, I'm sure you have access to stuff I don't here in the sticks of Virginia. The only thing I miss about living outside of DC are the ethnic restaurants and the ethnic markets.

Every so often I make from-scratch sauces (dried chilis, homemade broths, etc) then freeze them in ice cube trays. Makes having an authentic burrito real easy. I just refreshed my supply of homemade refried beans the other day, and keep servings of homemade queso in the freezer. Quesadillas are another favorite...kinda like making grilled sandwiches but with expanded possibilities.

Now I'm hungry again...
 
You make your own Queso? Wow! I LOVE queso! LOTSA Mexican restaurants here! I was seriously thinking about moving back to Alaska but I would really miss tacos and enchiladas. fresh salsas, chilies, etc. You sound like a great cook! And now I'M hungry!
