Buying celery

I like a little chopped celery in chicken salad, but that only requires one stalk. the store doesn't sell by the stalk - you have to buy a whole bunch which, right now is $3.99 a bunch and it's not something that can be frozen to keep. I hit on an idea to buy Green Giant rainbow salad mix which adds some crunch, not very voluminous and can be used in other salads. I made my chicken salad and it was okay.
 

The salad sounds like a good choice to add a little freshness.

A chopped raw crisp apple or some chopped bell pepper would be good for a little crunch and texture.

I work at using a bunch of celery about every 3-4 weeks.

I find that the larger tougher dark green bunches with a little mud on them hold up better than the triple-washed delicate pale green bunches.

Also, try using celery seed if keeping fresh celery on hand isn't practical.
 
Put the entire bunch in a glass of cold water in your fridge and it will keep longer tenfold. In fact, any vegetable that wilts before it’s expiry date can be revived this way. Trust me! 🤣
Years ago people kept it in celery vases on the counter or dining room table.

I still have a couple that I use for flowers.

Have you looked to see if they have some that's already cut up in smaller portions?
That's what I do when I want celery. I make sure I'm using it within a 2 or 3 day span.
If I'm not gonna use it all right away, I drain the store water off and put distilled in the plastic box.
 
Today I paid $1.48 for a bunch at the local Walmart.

They also had the pricier trimmed stalks and organic versions for around $2.50 - $3.00.

If you only need a small amount you might be able to buy it from the salad bar or pizza/wing bar but it would probably cost more than a whole bunch.
 
New stalk: trim about 1/2 inch off both ends, cut stalk in half. Submerge cut pieces in cold water to wash, drain and then refill bowl with fresh icy cold water and allow to soak for 30 minutes or so. Shake off excess water and put in zip-lock bag. If the stalk is fresh in the market, it will be good week or more.

Mr. Google says: entire bunch is stalk. Single stick is a rib.

Stores where I am sell loose celery ribs and loose carrots. I don't recall the price.
