Cold Broccoli Salad

INGREDIENTS:
4 cups fresh broccoli florets
1 red onion finely diced
3/4 cup shredded cheese (mozzarella)
1 carrot shredded


DRESSING:
1 cup real mayonnaise
2 Tbsp. white vinegar
1/4 cup splenda


HOW TO PREPARE:

Cut broccoli into small florets.. Add onion, carrot, and cheese..
In a large bowl, make the dressing..
Add dressing to broccoli and mix very well..

I like lots of dressing so I increase the quantity of dressing.. The more broccoli you have, the more dressing is needed..
Add the splenda (or sugar), vinegar to taste.. Not too sweet and not too vinegary..
I use mozzarella cheese but cheddar could be good also..

This is really good the second and third day.......
Keeps very well in the fridge..
 

Thanks, Steve...got it saved. Not sure about the Splenda, either; don't know much about that one. We like broccoli raw, too. Seems like if I steam it, it ends up overdone.

Yeah, raw is the best. Light, and I mean light, steaming is nice though and not overdone.
 
Somehow the fact the broccoli is raw doesn't seem to bother anyone.. Soft mushy veggies are not for salads..
The broccoli seems to soften by itself after one day anyway..

As far as splenda goes, we don't have any sugar in the house.. We are on low carb and only use splenda as sugar..
I don't see any reason why regular sugar couldn't be used.....
 
I never ate anything green until I was forty. I eat a bite of broccoli every now and then to appease the lady of the house? A dinner salad now and then but that's it for greens.
 
The broccoli is fine but you'll never find splenda ( or any man made sweetener) in my house.

I'm the same way, the splenda would be outta there! Plus, I wouldn't want that salad sweetened with anything really. :eeew: Other than that, the salad sounds good to me! I really like raw broccoli, and always put some in when I make a salad...super healthy too!
 
We use stevia in drinks. It isn't artificial. Processed from the stevia plant same as sugar is processed from cane or beets.

Brooke tried making some candy with stevia once. We discovered there is a substance harder than diamonds.:lofl:

So we use sugar for cooking. We try to limit it though as we try to limit carbs too.
 
For those that don't like the Splenda thing, just use sugar..
That's all !!!

I make this cold salad very often and I find it tastes much better after a few days in the fridge..
It will last several days in the fridge..
