Come to think of it, when I worked for the Sheriff's Dept in the jails, there was a cook that had bonafide chefs training and skills. He started out as an inmate doing time for a DUI, and they worked him in the kitchen as a "special functions" desert preparer. When he finished his sentence and got off probation, they hired him.
