Cucumber bread

We've an abundance of cucumbers; given many away, and so I went looking for recipes. Most were for various salads, but then I found this one.

The reviews look good, so I imagine it would be similar to zucchini bread, tho you have to drain the cucumbers first. Has anyone tried something like this??

Any other ideas??

We haven't tried that with cucumbers. We are beginning to get too many now. Earlier we had an over abundance of summer squash and found several recipes including one for squash cake which was great.

Too much okra is our biggest problem at the present.

You can always make pickles.

Sounds interesting. My ex-wife's mom always made excellent zucchini bread so why not cucumber . . .
