Good for you... one of our most well known TV chefs, Jamie Oliver has made a TV show which goes out every night showing people how to cook from scratch during this codid-19 situation... , using items that are only available in the supermarkets at the moment, and without some vital ingredients which are unavailable and or, are rationed ..and some are great nutritious recipes, and easy to do with just whatever you may have in the cupboard or freezer..
Tonight he made a Rissotto , just using a stock cube with any added veggies that were starting to die as a base .. and when the rice was cooked ( and you can use any rice at all even pudding rice) add some frozen veg 5 minutes before the end.. ... excellent nutritious dinner using next to nothing
300grms of rice for 6 people... so reduce your rice accordingly for less people..
he followed it with an eggless ( as eggs are in short supply) chocolate pudding/torte .. that took just minutes to make..
easy recipe...
preheat oven to gas 4 ..180c/350f
200 grms of any kind of nuts,
200grms of butter
200grms of self raising flour
200grms of milk
200grms dark chocolate or anything you have
Zap them all together in the processor/ blender or mixer..
Line a shallow tray or dish with greaseproof paper ( if you have no paper , oil or butter your dish then shake some flour on top lightly.. and nothing will stick to your dish after that)...
Pour in your mixture, and level it off..
Into the oven for 18 minutes and it should come out crispy on top and ozzing chocolate in the middle.. serve with yoghurt, or ice-cream if you have any ...or just on it's own with sprinkling of chocolate or sugar on top.. or even some fresh fruit as an addition
ETA during the mix, if you have any you can always choose to add..
.... a sprinkling of dried fruit to the mix, such as a few sour cherries, raisins or apricots.
