I don't eat breaded shrimp very often because of the calories, and the carbs. But I have eaten the Sea Pak shrimp on occasion. I just have it with a large green salad. It's really good!!!

I buy the SeaPak Jumbo Butterfly Shrimp in a 20oz. package when I find a coupon or an in-store promotion.
 

Jim, seems like you are doing well in feeding yourself good meals. Today I was not really hungry. Made a cucumber and tomato salad. Broke up some sliced turkey and provolone cheese into it. It was good.
 
Tonight's meal was a HUGE Russet potato with butter and bacon bits and a big salad with everything in it but the kitchen sink. I know my Detta is watching over me and I try not to disappoint her. I'll never be the cook she was though. RIP Honey...

My favorite easy and quick to make snack is a simple quesadilla... a flour tortilla folded over like a half moon filled with thinly sliced pepperjack cheese. I place it in a nonstick skillet on low heat flipping it over by hand from time to time. I don't like it too well-done... only the tortilla hot and the cheese melted. Yummm...

I know many people put lots of other yummy stuff inside quesadillas... but I prefer mine simple with just the pepperjack cheese.

I love cheese quesadillas, too. I also like to slice small pieces of pepper jack cheese, place a piece on a triscuit wheat cracker, and microwave for a few seconds till the cheese melts. (Not necessarily a meal but a good snack.)

I've done that with corn chips... with either pepperjack or cheddar cheese... nachos... yummm
