Easy Peanut Butter Fudge

2 cups sugar
1/2 cup milk
1 tsp. vanilla
3/4 cup peanut butter

Mix sugar and milk and bring to a boil. Do not stir. Turn down heat only enough to keep it boiling and boil for 2 1/2 minutes...TIME IT! Remove from heat, and stir in peanut butter.

Pour into a buttered 8"x8" pan.

When I make this (soon), I will lightly butter the sides of my saucepan to keep the sugar from crystalizing on the pan.

Be sure to time this because if it isn't boiled long enough, it won't set up.

And I'm toying with the idea of melting some semi-sweet chocolate chips and mixing with the peanut butter before adding the peanut butter to the milk/sugar mixture.

I love your recipe Georgia..

Tell you the truth I am searching for an authentic recipe for fried chicken...American style..

I don't have a recipe for fried chicken, but I PM'd you instructions about how I fry it.

Feeling like the mad scientist, I just ventured to the kitchen and made this fudge. I did add a cup of melted chocolate chips. Thought it looked "grainy" as I was mixing, but after I spread it in the pan, I had to taste what was left in the pan, right? It's good! Not grainy...that might change as it sets up. Guess we'll find out:)

I'd forgotten how hot sugar gets when it melts and boils so had to keep turning the heat down to keep it from boiling over.

The only chocolate chips I could find in DD's pantry were milk chocolate so I used those. Still tastes good, but when I make it again, I'll use semi-sweet dark chocolate chips.

Peanut butter fudge is a favorite here too. For the folks in our family who can’t have nuts, I keep a nut-free backup: Cookies & Cream Fudge, no thermometer, one bowl, sets up in the fridge. I wrote it out here if anyone wants a look:

Tip from these old hands: line the pan with parchment and cut tiny squares... it’s rich.
Thanks Sarah. ♥️
