I haven't tried this, just copied it because it looks good, and it's soup season!

Easy Potato Soup

Ingredients:

1 - 30oz. bag of frozen diced hash browns
1 - 32 oz carton of veggie broth...
1 can of cream of potato soup (10 oz)
1 pkg. cream cheese (8 oz, not fat free)
1 cup shredded cheddar cheese
salt and pepper to taste

Directions:

Put the potatoes in a large pot. Add in the veggie broth and cream of potato soup. Add a pinch of salt and pepper. (I'd skip the salt...lots of salt already in the broth and cream of potato soup.)

Simmer, covered, until potatoes are tender, stirring occasionally (I'm guessing an hour or so?).

An hour before serving, cut the cream cheese into small cubes and add to soup. Mix a few times throughout the hour before serving.

Once the cream cheese is completely melted, it's ready to serve. Top with cheddar cheese.


I think the reason that it specifies not fat-free cream cheese is that fat-free probably doesn't melt any better than any other fat-free cheese.
 
I have this on the stove right now. It's done, and it's good and very creamy, but...it's a little bland so I tossed in some dehydrated onion. It still needs something, and after the family has weighed in, I think the "something" might be some chopped green chilies or maybe even jalapenos or habaneros, depending on how spicy you'd like it to be.

Because we used shredded hash browns in our household, those are what DD got. I think the soup would have a better "mouth feel" if she'd noticed that the grocery list said diced hash browns. It's already a substantial soup, but if you'd like more veggies, why not? Diced carrots, whole kernel corn, diced celery, whatever appeals to you.
