Egg prices will remain high

I'm going to continue buying eggs whatever I have to pay for them and I will buy and eat chicken too. I use all organic chicken all the time so maybe that helps? I haven't had any issues yet, so far, so good.

$12/dozen for medium eggs at the local supermarket. There used to be several egg ranches in the area, the local markets had really inexpensive eggs and chicken for sale. The [now defunct] Sunshine market always had great fried chicken cooking in the deli, always a quick and easy take out to bring the family on the way home from work.
 
After our local supermarket had no eggs at all a couple of weeks ago, I went back and the price for a dozen large eggs was $6.19. I said no way in hell was I paying that. I asked my son to check prices at the farmer's market. He wound up finding organic free range eggs for about $3.85 at Amazon Fresh, which surprised me. A friend of mine who lives in another town found eggs for $3.89 at their local Lidl's.

I saw a post on Facebook with a picture of eggs that were $11.99 a carton and I thought that was the craziest thing until I saw this on the news.

I rarely bake and I'm happy making Kirkland egg whites for breakfast. If I can't find a dozen eggs at a decent price, I'll stick to the egg whites, which will also probably increase in price, but should be a better value.

I looked at getting chickens again... My last order was $38 a few years ago... Same order today is $125
 
In my cart for Saturday pickup: (Uh... with the prices I'm seeing here, I'm wishing eggs could be frozen... but they can't, right? Not in the shell, of course, but the whites/yolks. Maybe I'm wrong... maybe that *would* work?)

Eggs keep for months under refrigeration.

USDA - "Eggs may be refrigerated three to five weeks from the day they are placed in the refrigerator. The "Sell-By" date will usually expire during that length of time, but the eggs will be perfectly safe to use. Always purchase eggs before the "Sell-By" or Exp (expiration) date on the carton. To keep them safe, take eggs straight home and store them immediately in the refrigerator set at 40 °F or slightly below. Leave them in their carton and place them in the coldest part of the refrigerator, not in the door. After hard cooking, eggs can be stored a week in the refrigerator."

They are very conservative on the time, imo.
 
Today I bought a carton for almost $7. I bought jumbo size so I can eat one instead of two..... and add other ingredients. Make them last longer.
 
Eggs are now $10.00 a carton here and that isn't even the organic ones. I'm still going to buy eggs because I believe food prices will go way up in the future because of tariffs and no one to harvest.
