Egg Salad

Besides mayonnaise (if you do use that), what else, if anything, do you put in egg salad when you make it?

I always like lettuce included in an egg salad sandwich. In the salad itself, I do not use mayo, I use honey mustard salad dressing (I like my egg salad fairly dry so I only use enough dressing to just hold it together), a little salt and pepper and a pinch of curry powder. If I have scallion on hand, some chopped works well for me. My mom liked chopped green olives in hers. I also prefer my egg coarsely chopped - use an egg slicer, then turn the egg 90° and slice again.

I never buy the already prepared egg salad at the store deli, they always seem to put too much mayo in it for my taste and chop the egg too finely. Looks like egg puree.
 

It depends!

My basic egg salad recipe is the same as my basic deviled egg recipe. HB eggs, mayo, mustard, S&P, celery seed and onion powder.

Variations:

Finely minced celery, bell pepper or onion.

A tablespoon of sweet pickle relish.

Crumbled bacon and horseradish.

Chopped pimento stuffed olives.

Minced ham.
 

I like to mix mayo,onion,salt and pepper,a bit of parsley and finely chopped bacon in with my eggs. My egg slicer lets me turn the egg in different directions which produces a very finely diced egg. I like lettuce on my egg salad sandwich with a pickle on the side.
 
Eggs coarsely chopped, Duke's mayo, Sir Kensington's Mustard Dijon, lemon juice, celery, chives or onion, sea salt, and fresh ground pepper...and if serving open-faced on a crunchy green lettuce leaf then I sprinkle some paprika on top for color.

If I'm in a hurry I'll just mix in some Duke's mayo, sweet relish (or chopped stuffed olives), sea-salt and fresh-ground pepper.

Cavender's Greek Seasoning. I don't know why they call it Greek seasoning because it doesn't seem to be Greek, but I love it. I discovered it years ago and I use it in just about everything. If I could have only one seasoning, it'd be that.
