Eggplant Pecorino

Just saw this on the show Cooks Country.
Make your eggplant parmesan like you do but here are some changes:
Dip slices in flour then egg then fry @350 until lightly brown.
Stack the slices using pecorino cheese & sauce instead of mozzarella
Top the stacks with fontina cheese and after baking at 375 for 30 min. move the dis to the broiler to brown the fontina cheese (1-3 min.)
This is on my To Do List for the week.

I like the idea of changing the cheeses. But I really prefer dipping in breadcrumbs over flour. Thanks for the idea.

The chef said no bread crumbs because it hides the eggplant taste. I make it both ways but prefer without bread crumbs. What puzzles me is he did not salt the slices and it set for 30 minutes to remove the bitterness of the eggplant. I always salt them then rinse before baking.
