Favorite homemade breakfast sandwich

2 eggs
bacon 2/3 slices (Lately I've been buying thick sliced. I always cook a pkg of bacon by baking on parchment paper in the oven then sealing in a ziploc bag and storing in the freezer.)
bun (Kroger Jumbo with sesame seeds)

Prepare your coffee/tea/juice because once you start cooking you have to work fast.
Heat oven ...350/375 works okay.
Turn on burner to cook eggs.

Spread inside of bun with margarine or butter, and place in oven.

Fry eggs

Heat bacon in microwave ...20 seconds should do it.

Remove bun from oven - should be toasted by now.

Put the sandwich together.

YUM! :)

You can add cheese, if desired.
When tomatoes come into season I'll add a slice of good tomato.

I think I know what I am making for breakfast. I have made similar before. There was a small deli near where I used to work that made a great breakfast sandwich. I got one almost every morning.

I usually do not do anything as elaborate, though I sometimes will toast a bagel or English muffin, fry an egg, and some ham or bacon and put them all together. With cheese ofcourse.
 
Ham or sausage would also work, but for breakfast bacon is KING!

Because I use 2 eggs and thick sliced bacon, the Jumbo bun works best.
 

Grape leaves, chopped, sauteed in vegan margarine, add crumbled tofu, onions, chopped garlic, rosemary, turmeric, pinch of salt, keep flipping until tofu is lightly browned. Brown thin patty of soysage. Brown tortillas in another skillet. Mash an avocado, slice tomato, removing seeds. Take the tortillas, and put slices of vegan cheddar and the soysage patty on them. Zap in microwave for thirty seconds, until cheese melts. Put tofu mixture on tortillas with cheese and soysage, spread avocado, add tomato slices. Wrap in paper-lined foil. Off to work!

It's also good if you dip the sandwich in beaten egg before you fry it, sort of a cross between grilled cheese and French toast.

Serve with a little side of maple syrup for dipping!
