Shop around a bit. Contractor supply houses are a good source. Talk to Special Orders at the big box stores such as Lowe's. I scored a real bargain on a Kohler Antilia. Remember to ask for any potential discount from law enforcement, firefighter, teacher, medical staff to veteran.

Take your biggest pot/cookie sheet with you when you shop and put it in the sink.

I'd only get one if I had a real need for it. I'm not sure what functions they are designed for, maybe someone who has a big family dinner each night and needs to be able to soak multiple pans at once in the sink (I definitely don't have this need)? Or maybe someone with a lot of children who might want to pop a wee one in there for a rinse off (I don't have this need either)?

The only use I think I could put one to would be to give a dog a bath, except I don't have a dog and when I did have a dog, he was little enough to wash in the regular sink. (We had bigger dogs but they went to the groomer, I wouldn't have wanted to try to lift them up into a sink).
 
I think it makes a lot of sense. I've done dishes in a sink so I have a biased opinion.

Cabinets and counter tops can be any height off the floor, to suit the user.

I am still 5'9. Add heels please. We did not build the current house so everything is US standard. No stone mason will remove the kitchen island and reset it after cabinets have been heightened two inches.

No, neither dogs nor children belong in the kitchen sink! I found it nice to have one bowl big enough to accomodate my biggest cookie sheets or hide the first set of dirty dishes from sight (custom board to cover it). Now I have a commercial sink/drain/faucet in the garage.
 
I like my traditional double sink with one sink over the garbage disposal for preparing veg, draining the pasta, etc. while the second one has a dish drainer set in the bottom for doing dishes as I cook. I have a utility sink in the laundry room for washing dogs and oven racks.

they are very popular here... they're called Butler or Belfast sinks....

The drawback with them is that they sit quite low, and can be painful on the backs of anyone tall.. and mostly they're too deep for short people... and the most important thing is, they're hard as granite so you have to place a tea-towel in the bottom of the sink to ensure your glassware or crockery doesn't get chipped..
