Grilled Lime Salmon with Avocado-Mango Salsa and Coconut Rice

You only half got me on this one, I have tried to like salmon but I just don't like it. I would sub in some beautiful grilled shrimp! Still just a great plate either way
Not sure where you are located in Dallas, but Central Market has great Herb Grilled shrimp. I buy a small container, add them to Sprouts' Citrus Shrimp with Cheesy Cauliflower Rice and eat them for days!

Not close to a Central Market but I would just do my own. I always have shrimp in the freezer.
 
First cool snap here, so I went citrusy for supper. I do juicy lime-marinated chicken with creamy avocado on top, and serve it over a little coconut-lime rice (or cauliflower rice if I’m being good). Bright, simple, and easy on my hands. This is the one I use: fiesta lime chicken with avocado. If you like salmon, you can use the same lime-garlic marinade and finish with a quick mango-avocado salsa, lovely either way.
