Hard boiled egg trick

When trying to peel a hard boiled egg, sometimes the shell sticks to the egg and it makes a mess of the egg.
Well, there is a simple trick that avoids that EVERY TIME.

I keep 1 liter of water chilling in the frig at all times. While I am simmering the eggs , I put cold water in a medium size bowl. add a tray of ice cubes to the cold water. Put in frig.

Put tap water in your small pan/pot and when it starts to simmer, put eggs into the hot water. START TIMING !
Simmer for 15 minutes. You know that green film on over-cooked eggs ? That green is Sulphur. If you simmer the eggs for ONLY 15 minutes, that green does not develop.

At the 15 minute mark, use tongs to put eggs into the ice cold water. When the hot eggs hit the ice cold water, steam collects under the shell and the shell separates from the eggs.

Let eggs chill. When thoroughly chilled, crack the egg shell, and the shell almost slides right off.

A neat little trick !
