I've been looking for some protein snack ideas.

Some ideas were good. Like jerky, piece of cheese, apple with peanut butter, protein shake.
However, tuna, salmon, although healthy, not my kind of snack. Maybe sardines on cracker or boiled egg. Maybe. Deviled egg would be good.

Anyway, I ran across this idea for popcorn. Not much of a recipe but I'll start with this.
Plain popcorn is ok and lots of fiber but not much protein.
They added nutritional yeast to make a cheesy popcorn and the yeast bumps up the protein!
I have some nutritional yeast in my freezer. This will be a good use.

So, the recipe is:
3 cups plain popped popcorn, 93 calories, 3.6 grams fiber, 3 grams protein, 1.1 grams fat
avocado oil spray to moisten, a ten second spray is 10 calories
1 tbsp. Nutritional Yeast, 15 calories, 2 grams protein, a little bit of fiber

Just an alternative to butter, which, of course, is delicious. 🙂
 

High Fiber Cookies
I love these crispy cookies. Dried figs are high in fiber and antioxidants and I sometimes chop up some dark chocolate instead of chocolate chips for an even healthier cookie. The thinner you press them before baking, the crispier they will be. - Jenny Jones

Prep Time: 14 minutes

Cook Time: 16 minutes

Total Time: 30 minutes

Makes: a dozen 4 1/2-inch cookies

High Fiber Cookies
Ingredients:

1 cup whole wheat pastry flour
1 cup rolled oats
1/2 cup All Bran Original cereal
1 teaspoon baking soda
1/4 teaspoon salt

1/2 cup vegetable oil
1/2 cup white sugar
1/4 cup brown sugar
1 egg
2 teaspoons vanilla

1/4 cup dark chocolate chips
3 Tablespoons flaked sweetened coconut
5 dried figs, chopped
Instructions:

Preheat oven to 350° F.
Line a baking sheet with parchment paper.
Combine flour, oats, cereal, baking soda & salt in a bowl or on wax paper.
With electric mixer on medium-high, beat oil, sugars, egg & vanilla in a bowl for 3 minutes until thick.
On low speed, stir in flour mixture, followed by chocolate chips, coconut & figs. Batter will be thick.
With wet hands or using a scoop, shape into 2-inch balls and place onto baking sheet. With a wet fork, flatten each one to 1/2-inch thick.
Bake about 16 minutes until edges are golden. Cool on the pan for 5 minutes before removing.

This sounds great to me, HL. I love nutritional yeast, but haven't had it in awhile. I used to put it on toast. But I think it does taste a bit cheesy. It's time to get some more!

The only ways I've used it is in salads or as a side. There must be more ways to make a snack out of it,

The first time I cooked it, it tasted awful. Then I read about rinsing it first and it worked like a charm.

I've tried so many times to like quinoa. I've made various salads, used chicken broth to flavor it while cooking, lots of lemon to enhance the flavor, but I finally just had to put it aside. It's been a really boring grain/pasta ? for me.

I still have some in the fridge...may give it one more chance. 🤷‍♀️

Quinoa seeds grow with a natural coating called saponin that protects them from fungus and pests. Saponin has a bitter, soap-like flavor that will permeate cooked quinoa unless it’s removed. Most commercially sold quinoa has already undergone a process to remove the coating, and this information is usually indicated on the package. If it’s not mentioned, or if you buy quinoa in bulk without packaging, you’ll definitely want to rinse it. And you may want to rinse it regardless because, even after processing, some residual saponin can still be detected by those very sensitive to its flavor.

I will certainly give it a try.
I rinse my brown rice, so why not rinse the quinoa.

You all should feel guilty for making me think about having a snack. It’s very rare that I do that, yet this afternoon I had three crackers and a Laughing Cow cheese

Serves you right, I have pumpking pie filling made. Waiting for the crust to thaw from the freezer. Holy Moly, I even have cool whip in the freezer. Well, that's on the counter now!!

Try the tri colored quinoa. And yes, definitely cook it in a very flavorful broth…I use chicken stock. Unlike rice, I don’t care for it as a side which was the way I tried to use it for a while. Now though I add it to soups and stews, and I especially like it mixed in to a cold salad whether it’s a green salad or a heavier bean and veg salad.

Thanks for the link @RadishRose I’ve had quinoa sitting in my pantry for ages waiting to used It to make a salad
with red capsicum / red onion / cucumber / parsley almost the same as I make a 4 bean mix salad in warmer months
We are just starting to get a few warmer days now after a long cold winter 🥶 so quinoa salad will be on the menu this weekend.
 
No, I have tried quinoa, not good, like eating sand. It might be better as a base for a good salad with plenty of veggies and a dressing like a pasta salad. I am not a fan.
