Honey Roasted Carrots

I love a good roasted carrot!! I use a little vegetable oil, salt, pepper, garlic and fresh thyme. Yummy!! They do not need honey, carrots are naturally sweet and more so when they are roasted. They are so pretty on the table!!

If you havw not used fresh thyme in cooking you need to try it. It goes so well with chicken, beef and vegetables. Give it a try, start with a small amount until you get the feel/taste of it. Then you can add more if it suits your taste. People rave about my beef stew and soups.
They ask what makes the broth so tasty, that would be the fresh thyme.
