horrors... no dry sherry

making a paella from a Christopher Kimball "Milk Street" recipe on PBS. it calls for half a cup of dry sherry... and i don't have it. i do have dry white wine. recipe has chicken in it. i'm imaging it won't be a fail with no alcohol at all, but thinking into future.

should i buy sherry? recommendations?

Dry sherry is not sweet. LOL, all of it is wet.

When made right, Paella is absolutely delicious. Most of what we got in Spain was the seafood version and also used a lot of saffron.

Oh, ok thanks. I cannot eat rice although I love it, it is a real kick in the blood sugar.

was gonna use wine and just forgot about it. used a little more chicken stock. i didn't get that crust, but it came out really tasty.

It can't hurt but I wouldn't substitute. Sherry has a distinctive flavor.

A little dash of sherry goes well in many soups. And it doesn't go bad. Also tasty on its own.

Yes! I used a little in a French onion soup I'd made years ago and in a creamy fish chowder. It is delicious.
