How do you like.....?

I cook potatoes in every way possible, I an really fond of litte red new potatoes that are boiled and covered in bechemal sauce, My mom would make these for the family when I was growing up. The potatoes came straight from out garden.

What ingredients are in bechemal sauce?
It is just the basic white sauce. 2 tablespoons of butter, 2 of flour. Melt the butter, add the flour, cook for 2 or three minutes on medium heat. I add slowly 2 cups of milk while whisking until it thickens.

I boil the little new potatoes until tender and then add them to the sauce. My husband and son loved these.

This is a base for many recipes. I call it the 222, equal parts of fat, flour and milk. If you need more, then do 3 of each and so on.

I use this basic for mac and cheese ( add your choice of cheeses at the end)
For scalloped potatos, cook until just beginning to thicken. You may choose to add cheese or just pour the base sauce over your potatos and bake as directed. I make it for breakfast, use sausage grease instead of butter for southern biscuits and gravy.
