Sunday is catch-up day, and getting-ready-for-work day, for both Ron and me. I guess if you're retired, Sunday isn't a particularly different day, but we're not, so it's essentially "launch" day for the week.
Ron has material he needs to either purchase, or load into the work van, tools to prep and load, depending on what the work week looks like. He'll also make phone calls relating to work, and do the billing, invoicing and paperwork from the week prior
I shop for the week (we both take food to work daily, so the fridge needs to be stocked and ready.) If I have computer work I'm doing for a client, I make sure it's done, or at least more progress made, I text or talk with clients as necessary to finalize my schedule, see what I might need to purchase for the work, make sure I have their credit card info or the actual card.
Both of us wrap up any household tasks I've listed to accomplish over the weekend...and that could be anything from washing the car to ordering more supplements to trimming the dogs' nails. And also things like changing the bed and washing the towels and other linens.
