How do you use leftovers?

This what we unglamorously call a “Leftovers stir fry” in our household! From various meals in the past several days….Ground turkey, sautéed asparagus, mushrooms and onions, steamed zucchini and squash, boiled rice, green onion and mushroom garnish, curried veggies. Add some freshly made cheese bread with chives, a decent Shiraz, and we have a lovely meal!

Any which way for me when it comes to leftovers.

- Leftover chicken, turkey... chow-mien, chicken salad sandwiches.
- Leftover ham... sandwiches, my Ukrainian salad, omelets, whatever have you.
- Leftover barbequed steak and pork chops makes for wonderful hot sandwiches for lunch, where I'll mix in onions, peppers, fresh garlic and spice, lightly sauté the ingredients, then serve over a fresh Portuguese bun with the addition of spicy ranch dressing.

For a mish-mash of this and that, that build in the fridge over the course of a few days, I've been known to add it to a pasta dish or use it in the making of soup.
 

How do you use leftovers?​

Well, after I've stuck on my fake mustache, inserted my head into my chef's hat, wrapped my chef's robe around me, I then scrape all the leftovers into a frying pan, cook on a moderate heat for 5 minutes, then, the moment when I taste it, if it's horrible, and it usually is, I give it to the magpies, they'll eat anything and we have very fat magpies around here. :)
 
I have good intentions for leftovers, really. They are carefully put into containers, and put into the refrigerator. Some are actually taken out later and eaten. Many, however, are intentionally or otherwise forgotten, and kept in the refrigerator until they evolve into new and terrifying life forms, some with criminal tendencies...

Occasionally, I even plan for leftovers. The other day I made stuffed peppers and doubled the recipe, half went into the oven, the other half I froze for an easy future meal. This serves me well with a variety of dishes - soups, stews, etc.

As kids, we were often reminded what it was like growing up during the Depression, and I took that to heart - still do, as a matter of fact.

Waste not, want not, eh...?
 
It’s cold here so it’s time to make a nice hearty beef stew , which I did last week
to (us) these is nothing better than a bit of beef stew on toast on a cold night especially
when it’s been cooked a day or two before.

We love left over veggies , especially a mix of mashed potato / pumpkin / spinach ~ silver beet
fried up till it has a brown bottom , and a crispy bottom fried egg on top of veggies

This is exactly our mindset. I HATE throwing food away. 😖
 
Any leftovers I have never go to waste. 4 Raccoons visit me almost every night. Two of them take food out of my hand.
And a mother Opossum I fed brought 3 of her babies for a visit & they like leftovers, too.
