How Important is Pie Crust?

When I used to attend church suppers or pot-luck dinners, I often noticed that when people had pie for dessert just ate the filling and left the crust. What's that all about? Why not just get a can of pie filling and eat that?
 

Most pastry, like dough, is unhealthy if eaten in excess. They are generally made with refined sugar, refined wheat flour, and added fats. Shortening, which may be high in unhealthy trans fats, is also added. Combined in the pastry crust, they amount to as many calories as the entire meal. Leaving the pastry crust allows the diner to enjoy the dessert without the guilt.

At lunchtime in elementary school, I'd watch kids unwrap their sandwich & peel off the crust on the bread & throw it away.
I always thought, "Why do they throw away the best part?"
 
I feel the same way about baked potato skins.
The skins are ok if they are well washed before cooking and have had no salt added. Most people know of that wonderful take away we Brits are famous for, that being, fish & chips. If you want healthy fish and chips, leave the batter, on the fish, well alone. Most don't.
 
I never liked pie crust, when the holidays rolled around my grandma made all the pies. Everyone said her pies were delicious. When I asked for a piece of pie my mom would ask what kind and then added that I had to eat the crust also. I quickly changed my mind and stuck with the fruitcake.
 
Life is to short to worry and in any event crust is the best part 🥮. Mind you I have gone up two sizes since COVID19 so take my opinion with a pinch of salt or even better a large slice of pie !
 
When I make pastry I never use refined white flour, always wholegrain and I never make a pie crust. To make the lid stick to the base, instead of water I use an egg white, I keep the yoke for brushing over the pie surface, it gives the pastry a deep brown colour when it comes out of the oven.
