How Long Will Pickled Beets Last In The Fridge After They Are Opened?

I love beets in my salad and used to buy them canned. I would always wind up having to toss half the can because I couldn't use them fast enough. I never have seen small cans of beets. Last weekend I bought a jar of pickled beets thinking because they are pickled, they might last longer. The label shows that by weight, it's about half the weight of a can. but the jar size seems almost the same size as a can. I'm not sure I'll be able to eat it all before they start going bad. Do you think they'll last longer than plain beets in a can?

Why don't you use fresh beets grated on your salads? They taste great and any leftover just cover with some tin foil and use within a couple of days.

I have no idea. I can't stop eating them once the jar is opened, so they're gone in three days. Then I use the juice to pickle a couple of hard-boiled eggs. Yum!
I like that idea of using the juice to picked HB eggs Jujube. I think I should also eat some even when I'm not having a salad. That jar was expensive relative to what canned beets cost. I'd hate for them to go to waste.

I have never been a fan of beets. When my Mom lived here they were a favorite. I bought a jar of pickled beets. They were expensive so I would buy canned beets and put them in them in the pickled beet juice. There was no apparent difference in taste. She had what she wanted and was thrilled we could save money by doing this.

My wife makes pickled beets using beets from our garden and then cans them. Once opened, they do have a long shelf life in the refrigerator as Bella's link indicates. But . . . since we discovered that we also like them heated as an accompaniment to pork (tenderloin, roast, chops), they seem to get used up quickly. :D

I was traumatized by beets as a child. Seriously, I went to Catholic school for a couple years, and the nuns made us eat everything. They served beets a lot, probably because they were cheap. I tried everything to avoid them. Tried smuggling them into the trash in my milk carton. Nun made me eat them anyway. It was years before I could even look at them. Dave makes a great borscht, and I like them in a salad with goat cheese. Other than that, you can keep them.
