I am exhausted WOW

As I mentioned before, we are not doing our official Thanksgiving dinner until tomorrow.

I am not complaining, but for some reason I am totally wiped out this evening. Just from the prep. Baked two pies, cubed up my bread for the stuffing, cooked the meat for stuffing and set it aside for tomorrow. And just the cleaning up after myself.
Not sure why I am so tired this year, usually I am OK with all of this. Tomorrow I have just 4 of us...my husband and my two cousins. All men, and all needing prodding to help out with the after dinner clean up. I know the cousins are my guests, and usually all I ask is for them to bring their dishes to the sink after we eat, and help themselves to drink refills. No offense to the guys here who DO help out.

I do not want to sound like I am whining, I actually enjoy doing the day. But this is also the first year that my husband has not been able to help as much as before due to his health issues, and I have spent a lot more time caring for him than usual. He does appreciate it, and tells me so often.

Do not expect advice here, just a listening ear from my virtual friends here. Thanks.

The good news is that it will be clear sailing tomorrow!!!

I had similar feeling this year and I'm only cooking for one!

Next year I may just pick up a plate from the local Wegman's.

Happy Thanksgiving, Marie

Thanks, Aunt Bea. I do not always shop at Wegmans, but they do have good meals. I go there on occasion to get me some sushi. My husband does not like it. He also will ONLY eat Wegmans Albacore tuna.

I am tired and we picked up a Cajun fried turkey, Bob Evans sides, Patti LaBelle pies and Hawaiian rolls. The only thing homemade was the sweet tea and dressing. Even the gravy was from a jar. Wait I did make homemade cranberry sauce. Great time and visiting.

That's the most important part of any holiday celebration!

Sorry you're so tired Marie. Sounds like you're having to do more than you typically do due to your husband's health issues which could explain why you're so wiped out. Plus at least for me since I hit 60, every year seems to steal away just a little bit more of my energy.

We did Ron's thanksgiving yesterday. We'll do mine with my family tomorrow so today is shopping and prep for me, with a friend's Thanksgiving dinner to go to tonight. I'll make the desserts and and shepherd's bread dip, prep the stock for the gravy, assemble the vegetable casseroles. My son in law is deep frying a turkey. I'm glad to be able to take it slowly and actually ENJOY the process. I love to cook, but not when I have to be rushed about it.

Feeling better this morning. Just got my Turkey into the oven. I took some advice from my brother and made extra stuffing. I bought two turkey thighs and divided the extra stuffing into two casserole dishes and put one of the thighs on top of each. I am going to bake one of them today (I have a convection oven) and then will bake the other tomorrow and probably freeze it. My brother was a MUCH better cook than me and I used to call him often for advice. He said I could freeze some of the extra stuffing. Won't be great, but will be OK. That is one of the things I miss about not having my brother around, he was always just a phone call away.

I still make my mom's stuffing, meaning the recipe is at least 70 years old. I think she adapted it from her own mother's recipe.

The bulk of the work seems to have passed to my kids and grandkids. My son made Thanksgiving dinner at his house, the whole family traveled here to share the holiday (in some cases, flying cross-country), two of them stayed at my house (I only have one guest room), and all I had to do was bring a few items from the store. We all had a great time, and the food was delicious! Today, my son is bringing over some of the leftovers, and those of us who are still here will enjoy all that delicious food again.

I know for sure that I would be unable to provide this kind of feast on my own, although at one time it was no problem.

One minor fail. I was wiping down the table, so I could put down the table cloth. Forgot I had my little box of Bells seasoning still on the table. Dumped it all over the table and floor.

5:21 PM Eastern time and everyone is gone. It went well. My cousins even helped me bring my trash and recycling to the road for pick up tomorrow. Our normal pick up is today, but delayed due to holiday. So we are set.

I also had my Thanksgiving dinner today since hubby had to work all day yesterday. Just my daughter, her boyfriend and his son. We have smoked turkey my husband picked up from a local restaurant. I still made mashed potatoes, gravy, and Stove Top stuffing. I used to make my own dressing, but hubby and daughter like Stove Top better. Fine with me. Anything that makes my life easier, Dinner went very well.
