It's inching towards 5 AM. I need to head into the kitchen to mash the tofu, put it in a colander, put the weights on it to drain it through the cheesecloth, prep the green beans, brown the tofu cubes, toast the almond slices, make the cranberry-orange cobbler, make the dressing, mix up the soy sauce/toasted sesame oil basting prep, and more. Serving seven, at noon. Man, I love the holidays! Have a happy time, y'all!
