Easy - Steam or boil for 30-60 seconds removes the air pockets in mushroom. You can throw water in to the pan you are frying them in. Sorry if this is old news to some but we are never too old to learn,
 

Hmmm, just my opinion, but I don't want to add more water to mushrooms.
I want to remove the water from them by sauteing them gently in unsalted butter.
They won't brown if you add salt, so I don't.
Yup, in fact you are suppose to wipe them off with a paper towel not wash in water

I'm always interested in something new and I watched the video of how it's done. I was just about convinced to give it a try with some mushrooms I just bought, until I saw the end product. They look to be so full of water, they just don't look appealing or appetizing to me. I'll stick with my tried and true method, but I do thank you for the information. I'm passionate about cooking and food.

Know what you mean, Julia Child taught me if you crowd mushrooms they won't brown. Normally I use a small amount of oil in the pan, heat it and then brown the mushrooms on both sides, being careful not to have the heat too high. After removing the mushrooms, adding broth to the pan makes a nice a jus.
 
For me when doing mushrooms I always cook them with onions and a small amount of margarine. If you use a small amount of oil or margarine or even butter they won't absorb very much oil.

I'll give the method recommended here a try. I'll try anything in cooking.

It depends on what you are trying to accomplish. You can use dried mushrooms as well. They still have a good taste. But nothing like wild mushrooms. They should be coming out soon. This year I will pick some. There's one spot I know of and it's never fail. Every year they are there and it's on my way to the grocery store.
