I just made a vat of chili

I love chili and never could find the prefect recipe. Finally I found two that when combined turns out just the way I like it. Not to hot and just a little spicy. One is vegetarian, the other is not. The problem is that the recipe calls for many different cans of beans, even chick peas which I love, tomatoes, paste and sauce and even potatoes, and carrots, onions and garlic. I could cut it in half but would be stuck with many types of plain beans which the hubby will not eat so I can't even put it in soups and stews. So I made a vat of it. The chili does freeze well and I'm sure my son will eat it once he douses it with hot sauce. I think we are good until April. lolchili (800x600).jpg
 

Looks really good. I made some last month. For the meat I used ground turkey and some of those in expensive thin cuts of beef cut really small. My husband LOVED it. My plan had been to make enough to freeze some. Did not happen.
 
rkunsaw and Falcon, I just saw your post about the vegetarian part of my chili recipe. I agree with you about putting meat in the chili. The vegetarian recipe was found in a newspaper and had tons of different beans in it which I love. Even chick peas and some carrots. I made that recipe by itself and really missed the meat. Then I made the standard recipe and missed all the beans. I combined the two which is why I ended up with a vat of it but it was just right. Meat,beans, and some other goodies and best of all the seasoning was just right. Sort of like the 3 bears nursery rhyme only mine was chili and they had porridge.
