Wow, the Reese's Cake sounds heavenly.I haven't been to one in decades, even the last office party one was over 12 years ago. But two regular ones i made were 1) a fruit salad with jellied cranberry sauce, berries (whatever looking good fresh at the time) and shredded coconut and 2) potato salad with bacon bits and shredded smoky cheddar cheese. If asked to bring a desert my go to was a friend's son dubbed a "Reese's Cake", made a chocolate cake in what amounts to a giant tart base shape (they called them Tiara pans i think), filled the depression with a peanut butter filling (similar texture to PB frosting) then enrobed it in chocolate fudge frosting.
If it was a good sized and diverse group i didn't worry about dietary issues there's usually enough variety and nobody is required to eat some of everything.
Never had ratatouille that I know of, and if I did, I probably didn't know what it was. Ha ha.What's left around the garden, BC?
I made some ratatouille w end of season veg last week. It's vegetarian, good hot or at room temp, not typical and it's tasty.
I first had it after college decades ago. I met some friends in the town at some basement level restaurant/bar called "Lizard's Underground." It was pretty good stuff.Never had ratatouille that I know of, and if I did, I probably didn't know what it was. Ha ha.

Slice up Granny Smiths (or any tart apple). Soak overnight in orange juice. Whip together a jar of marshmallow fluff and a block of soft cream cheese.
At the last minute, drain the apples, dump onto a platter, sprinkle some of the OJ on top. Put the cream cheese marshmallow mixture in a bowl and put in the middle of the platter. Provide cocktail picks or a spoon to dip out the dip.

I guess if the potato salad didn't turn out ok, I would have lots of other options.Salads (creamy potato salad, garden salad, pasta salad), bread baguettes and deli meats or sandwich loaf with cream cheese icing cut into thin slices. Bring pickles, beets, cocktail onions and condiments.
Desserts galore, milles feuilles pastries, profiteroles, brownies, banana bread, gingerbread cake or a triple no bake chocolate cheesecake.
If others are already bringing those, go for providing the drinks, tea, coffee, milk (the latter for the one Young's, add chocolate milk too) and spirits, wine.
Sorry, I've created and participated in so many. We always received a list of suggestions and we discussed who was bringing what. Seasons play an important role in the general theme of said potluck.
Although, if you had a way to keep your pot of chili warm, I'd definitely bring twice-baked potatoes and grated cheesefor a simple feast...

Looks like a high of 73 deg for the day, so I think it will be ok, but that's a great tip on nesting the bowls. I may use that in the future. If it's something that needs to be kept cold, I"ll sit my salad bowl inside a larger bowl that I filled the bottom & then the sides in ice to keep it cold.
The last potluck I went to had more desserts & very few sides. The first time I'd seen that.

I bet they are. But probably a bit above my skills. They sound delicious though.Hmm. Since it's fall, I think Butternut Squash Lasagna with amaretti cookies for the vegetarians and English Sausage Rolls for the meat eaters. I've made both of them many times and they are scrumptious!
If you decide on the chili, you might consider adding cornbread croutons. I made some Pumpkin Chili today and toasted 1-inch cornbread cubes (the cornbread was from the supermarket's bakery) for 10 minutes in a 400-degree oven. ..or chopped dates... or raisins...I do have a dark chocolate brownie mix in the pantry. All I would need to add is walnuts. Maybe I could make those and the potato salad ... Too much?
