Here's the one I made a bunch of times starting a few years ago... I wasn't sure what to expect, but everyone who had some liked it. Of course you need your sweet cornbread with it!Wow. I had no idea there even was such a thing as pumpkin chili
Pumpkin Turkey Chili
1 tablespoon vegetable oil
1 cup chopped onion
1/2 cup chopped green bell pepper
1/2 cup chopped yellow pepper
Garlic powder
1 pound ground turkey
1 (14.5 ounce) can diced tomatoes
1 can green chiles
1 can black beans
2 cups pumpkin puree
1 1/2 tablespoons chili powder
1/2 teaspoon ground black pepper
Sprinkle of cumin
At least 1 cup of chicken broth
Shredded Cheddar cheese
Sour cream
1. Heat the oil in a large skillet over medium heat, and saute the onion, bell peppers, and garlic until tender. Stir in the turkey, and cook until evenly brown. Drain, and mix in tomatoes and pumpkin. Season with chili powder, pepper, and cumin. Add chicken broth until the right consistency. Add black beans and chilies. Stir. Reduce heat to low, cover, and simmer 20 minutes. (Or transfer to slow cooker at this point and cook on low for at least 7-8 hours. Serve topped with Cheddar cheese and sour cream. **This is good with Ritz crackers crushed into it.
