If you were going to a potluck dinner, what would you make?

Wow. I had no idea there even was such a thing as pumpkin chili
Here's the one I made a bunch of times starting a few years ago... I wasn't sure what to expect, but everyone who had some liked it. Of course you need your sweet cornbread with it! :giggle:

Pumpkin Turkey Chili
1 tablespoon vegetable oil
1 cup chopped onion
1/2 cup chopped green bell pepper
1/2 cup chopped yellow pepper
Garlic powder
1 pound ground turkey
1 (14.5 ounce) can diced tomatoes
1 can green chiles
1 can black beans
2 cups pumpkin puree
1 1/2 tablespoons chili powder
1/2 teaspoon ground black pepper
Sprinkle of cumin
At least 1 cup of chicken broth
Shredded Cheddar cheese
Sour cream

1. Heat the oil in a large skillet over medium heat, and saute the onion, bell peppers, and garlic until tender. Stir in the turkey, and cook until evenly brown. Drain, and mix in tomatoes and pumpkin. Season with chili powder, pepper, and cumin. Add chicken broth until the right consistency. Add black beans and chilies. Stir. Reduce heat to low, cover, and simmer 20 minutes. (Or transfer to slow cooker at this point and cook on low for at least 7-8 hours. Serve topped with Cheddar cheese and sour cream. **This is good with Ritz crackers crushed into it.

I haven't had key lime pie in quite a while, but if it's stupid easy to make, that's my kind of recipe. I will check it out.
Nellie and Joes Key West Lime Juice available pretty much everywhere in the US.

I've made them in the camper van when it was our turn to cook dinner on group campouts.

Don't worry if things are room temperature...everyone will still enjoy your chili.
Also stuffed mushrooms and meatballs are always a big hit.
Veggie Platters, Fruit platters, and colorful salads are great for the vegetarians
 

Whatever you decide research before just making it. Be careful of some foods that require refrigeration like food made with eggs.

Got it. Copied, pasted, and saved. Just one question, is pumpkin puree just the canned pumpkin that you get to make pumpkin pie?

Yes, the plain pumpkin... there are also cans that are "pumpkin pie mix" with the sugar and junk already in... you don't want that... just the pure stuff. Also, you can use the meat you want, the beans you want, etc.... very versatile. Saltines would be fine, too, but the Ritz were amazing in it.
 
I wasn't sure a dessert item is appropriate at potluck dinners, but I see others have suggested dessert items. I was going to suggest fruit salad. Cakes are good too. My husband and I always brought the desserts to my sister's Sunday dinners since I don't cook for others. Our go to dessert was Costco's apple pie. Sometimes we'd buy Cheesecake Factory cheesecake variety (also from Costco).

I was thinking perhaps a pot of chili, but no way to keep it warm, since I got rid of my slow cooker.
Chili is too boring. A typical man's contribution. Very predictable. And, what are you going to do when three or four other guys show up with the same? Probably take it home and dump it.

Better idea: make a cake or homemade cookies. Show the crowd you are different. You got style. Stylize your contribution. Like add peppermint flavoring to a chocolate cake. That would be memorable. You want to be noticed, not forgotten so you'll be invited again.(y)

Yeah, no Costco close to me, but I do like the fruit salad idea. But a homemade apple pie, now that's something everybody loves. I use to help my wife make it before she passed, so I know how it's done, but it is a bit of work for sure, but oh man is it delicious.

All good points, but I think I have decided to go with the potato salad. Probably no guy is gonna show up with one of those anyway, so it should be fine.

Yes. That sounds different. Are you going to make it or buy it? Potato salad can be a bit flat if you are doing it for the first time on your own. Bought gourmet specialty salad would be something different. Not the usual bland stuff you buy at the regular grocery store. That's as forgettable as chili.
 
One thing usually lacking at a potluck is some good salad. A large bowl of salad with a variety of items like spinach, kale, onion, peppers, cauliflower works well. Bring dressing too.

Just got back from the grocery store, so I'm committed to making it now $36.00 later. But it should be good. I got red potatoes, smoked applewood bacon, fresh eggs, celery, smoked gouda, black olives, and red onion. The rest I have (Mayo, dill pickles, dijon mustard), so with all that, it shouldn't be bland. I just hope I don't screw it up. 🙃

A guaranteed hit. Make sure to put some of it away for yourself first. There recipe should be enough to do that and if it isn’t, I’d adjust it to do so. It actually tastes better when it’s had a chance to marinate in the Friday’s for a few days. Those small red potatoes are perfect for this type of dish. I prefer then to Yukon yellows. Well it's going to take a bit of time to form the corporation, and then acquire the jet, and I'm thinkin' the potato salad won't hold up that long, so not quite sure how to pull that one off. Besides, your confidence in my culinary ability may be a bit bold. I don't even know how long to boil the potatoes, not to mention the right portions for everything else. So skydiving might be less risky if you're feeling adventurous.

Cook them so they are a bit undercooked
Let them cool a bit then set them in the fridge. It helps in the cutting process so they don’t crumble.
