If you were going to a potluck dinner, what would you make?

What day is the potluck and how many are expected to attend. The rule of thumb for quantity was to make enough for yourself and 8 other people. You don’t have to feed everyone there. There’ll be lots and lots of food.

It’s a potluck. Anything goes.

It was last night, and I had no idea how many would attend, but it was a good crowd. I wasn't familiar with that rule, but it was enough, and I kept a little for me in the fridge, so I get to have some more today for lunch. 😋

I got red potatoes, smoked applewood bacon, fresh eggs, celery, smoked gouda, black olives, and red onion. The rest I have (Mayo, dill pickles, dijon mustard), so with all that, it shouldn't be bland. I just hope I don't screw it up. 🙃

Now that you have been to the potluck, hope you noticed what was offered.
Hope if gave you ideas of what to bring to the next one.

For a Fall pot luck, beans of some sort were probably there?

For a large gathering, Calico Beans , makes a lot.
You can find the recipe online,probably varies in different locations.

You are absolutely right. There was chili there, as well as baked beans, and shepherd's pie too. There was also pumpkin cornbread which was delicious, and my first time for it. Among the desserts was a cherry cobbler type dish with sliced almonds all over the top, and it was awesome. I've decided I like potlucks. It's like the smorgasbords that you hardly see anymore. You could say it's a personally customized dinner.
 
There are many foods that can be turned into a casserole to feed a group. Chicken burrito casserole or stuffed pepper casserole or seafood pasta. Type in a couple of your favorite ingredients and recipes will pop up. Allrecipes.com seems to have endless ideas.

Our potluck luncheons ceased to exist during the worst of the pandemic. When they resumed, we all brought bag lunches. I miss the amazing variety but getting together is still a good thing.
