I don't eat salads as often as I should, but I like to use baby spinach, tomatoes, red peppers, cucumbers, broccoli and sweet onions. I like to make my own creamy dressing out of mayo, red wine vinegar and Italian seasonings.I'm going to really try and eat more salads but I'm looking for a variety of salads so I don't get bored with them. So, what kinds of salads do you put together and what's in them?
Wow does that ever soundI make a lot of low carb/keto salads but you can add anything you want to them. I make a regular salad with lettuce, tomatoes, peppers, onions and put ground cooked beef that is seasoned with taco or Italian seasoning on top. I call it a burger bowl. When I cook the beef, I add 2 tbsp. tomato paste and 2 tbsp. of Rotel diced tomatoes, Parmesan cheese and whatever seasonings I want. Then turn it off and cover it with shredded cheese. You can top it with salsa or ketchup or Burger King sauce or salad dressings.

I switch it up a bit to use what I usually have on hand. I leave out the bacon and celery seeds, and substitute roasted pecans for walnuts and dried cranberries for golden raisins. It's different and delicious, and holds up well for a few days.

I love beets and avocadoNothing special, just part of a bag of supermarket prepared salad mix and some olive oil based dressing. Frequently throw in diced avocado and a couple of slices of canned beets.
