Jiffy Corn Casserole

(the newer, updated version is o.k., but I think the original is better):

1 can creamed corn
1/3 c. vegetable oil
4 large eggs, lightly beaten
1/3 box Jiffy Corn Muffin Mix
generous sprinklings of garlic powder and minced onion

Mix ingredients together.
Pour into casserole dish or baking pan that's been lightly sprayed with cooking spray.
Bake in 350 degree preheated oven until firm- depending on your oven and the pan you use, it takes approx. 45 minutes.
Add 1/2 cup to 1 cup of grated cheese (I use Colby/Jack blend), and return to oven until cheese is completely melted- approx. 15 minutes.
 

sounds good Janice, OH I do love my corn, love corn in the casseroles, just recently a friend told me to
try a mix of tuna fish and add some soft corn from a can. I thought arg that might not taste so good. SO
for my sandwich I did the mix with tuna, cream corn, bits of onion, bits of sweet pickle, mixed with Mayo
and on toasted bread, NOW that ended up tasting great actually!
