June 17th - Eat Your Vegetables Day

Today's my Vegan son's birthday, I'll have to tell him about this!

We love all vegetables, raw, steamed or roasted. I go down the line at the store pretty much picking up one of everything. The produce manager remembers the day, just before Thanksgiving, when I walked in and got tears in my eyes and told him how beautiful it all looked.

My husband was vegan...I had to have all the veggies in the house for him, especially hearts of Palm..he loved those...
 
I only ever buy Broccoli, Brrussel sprouts, Leeks, Onions, kale , Parsnips..mushrooms, Mange tout... .. fresh/frozen... and fresh aubergine


I buy beans and butter beans in a can....


I cannot stand artichokes, Hearts of palm, Chickory, Beets... cauliflower :sick:
I agree with all of the likes, and we grow as much as we can ourselves. I don't like artichokes, but I do like Beets and Cauliflower. The trouble with cauliflower is that it has very little taste.
 
Every day is vegetable day for me. I like most vegetables but carrots are my favourite and I have carrots almost every day. I can eat celery and broccoli but I wouldn't mind if I never saw them again.

How were those hearts of palm prepared?

So far, I'll eat all the veggies mentioned, some with more enthusiasm than others. I can't think of the any I don't like, depending how they're done.
