Lazy Days Cake

2 eggs beaten

1 c.brown sugar
1 c. flour
1 tsp. baking powder
Pinch of salt

1 tsp. vanilla
1/2 c.milk
3 tbsp. butter

Add sugar, flour, baking powder, salt and vanilla to beaten eggs.


Boil milk and butter together and add to first mixture. (Let it cool a bit.)



Put into 8 x 8 pan

bake in moderate oven for 25 minutes. ~350 degrees.


Topping


1/2 C brown sugar
3 tbsp. butter
4 tbsp. milk


Add 1 cup coconut to above ingredients which have been boiled together.


Put on top of hot cake and put back in oven and put back in oven till brown. 3-5 minutes


If not browning, turn on broiler for a couple of minutes.
 

That sounds really good, like kind of a caramel coconut cake. I like that it is also a smaller dessert for those of us who live alone.
As I recall, it freezes well too.
 

I've been seeing recipes about cakes with only a couple of ingredients..no eggs or things one would think would be in cake. Since I have no intention of trying those recipes, although they sounded good...I didn't bookmark any of them. But I'm sure I'll come across them in my news apps again and will post here in case there are other lazy cooks who might be intrested.
