Looking for suggestions..for substitute item..in salad..

I know someone will be able to help...as there ARE good cooks here!

In making tuna or chicken salad..I have added celery...
in the past, I could buy just a single stick or two...(not anymore)
Not the whole stalk.

As it goes 'bad'..before being able to use it all.

What can you suggest for a substitute for crunch?🤗

Along with the other suggestion look at a list of root vegetables & experiment. I like bean sprouts & radish cut up in chunks as a different taste for tuna .
As for the left over celery there is no waste if you make cream of celery soup. That soup can be frozen in single servings for a lite soup & sandwich meal or in casserole recipes.
 
Not quite and answer to your question but save the top few inches of your celery stick, place it in water and then watch the new leaves grow which add flavor to other dishes. I also do this with green onions but neither of them will last forever so use them while you can.
 
Use lettuce as a celery substitute; either chopped and added to the salad mix or left in leaves on the sandwich itself. If added to the salad it needs to be eaten immediately as the lettuce wilts quickly w mayo.

Celery does last for weeks if held properly under refrigeration. It will last the longest in the coldest spot in the fridge around 32F, or 0C.

Wilted celery can be revived by placing the cut stalks in a glass of water and returned to the fridge.

Chopped up walnuts or pecans for chicken salad. Chopped pickles for tuna.

A tip for celery: Wrap it air tight in aluminum foil before putting in fridge. Use what you need and rewrap. It will last for weeks.
Wash the whole celery stalk and drain.
Wrap entire stalk firmly in aluminum foil.
Refrigerate.

Will last at least a month.

(If foil is not wide enough, tear off a long sheet and roll celery diagonally; close off ends.)

I always use a spear of chopped dill or Kosher pickle in my tuna salad and a few slices of chopped apple in my chicken salad.

Jace, when you use a stalk of celery, use the leafy bit, too! It doesn't add much crunch, but there's a lot of flavor there. It's especially good for soup, stew, and pasta sauces. And, if you want, you could save that bit for those kind of things after using the stalk for salads or whatever.
