Make or Buy Potato Salad

I much prefer homemade.

At the store deli, the have a container of Amish potato salad w/sweet pickle & egg which isn't too bad. Hubby buys it occasionally and I doctor that up with chopped green olives and celery.
That explains why my grandma always put sweet pickle in her great potato salad, she claimed she was Pennsylvania Dutch (means German). My potato salad, I use canned potato chunks, onion, celery, sweet pickles, eggs all chopped together and enough mayo to hold the salad together. I use the canned potatoes because I simply can't stand very long because of my back. My family likes my potato salad.
 
I do it both ways depending on how much time I have. I've never used eggs in potato salad. I don't mind deli potato salad at all. I know the deli manager and he always takes care of me so I have no worries about bad food in that regard. I cook almost every day that I can and I deserve an occasional day off. Why not during these hot summer months? :giggle:
 

As well as potato salad with mayo, I often make it with a vinaigrette dressing. For this, I put the cooked and diced potatoes in a bowl with chicken stock and then add finely chopped onion and spring onions. Then I add a dressing of extra virgin olive oil, white wine vinegar, crushed garlic, salt pepper. Ideally you want a floury potato to soak up the flavours.
