I have been trying to eat less meat and more grains and veggies. So, lately I have been experimenting with concoctions for meatballs for my pasta.. Meatless meatballs. Last night I tried mushrooms, onion, black beans, brown rice. (bound with egg and breadcrumbs) Turned out to be the consistency of mud-balls.. not meatballs. I have also tried soy, oats, brown rice.... can't say those tasted very good... but the consistency was better. Any Vegans here? Any advise?
