My Chicken Salad

1 cup cooked chicken meat, shredded
1/2 cup Green Giant rainbow slaw
1/4 cup broken or coarsely chopped walnuts
1/4 cup craisins
salt, pepper, garlic powder to taste
ranch salad dressing to your taste

mix all in a bowl until well combined.

serving suggestion - spread on toasted whole-grain bread or scoop onto a bed of lettuce.

The rainbow salad mix was new to me so I had to look it up.

I usually make a small chicken salad as part of the life cycle of a rotisserie chicken from the local Wegman's.

Here is a good chicken salad dressing from the former first lady Barbara Bush.

3/4 cup mayonnaise
1 tablespoon fresh lemon juice
1 1/2 teaspoons curry powder
1 tablespoon prepared chutney

Makes enough to dress the meat from a whole chicken with additions of fruit, nuts, etc...
 
I hope nobody minds this newbie adding my chicken salad recipe I've used for several decades with rave reviews every time.
It's wonderful on a bed of butter lettuce leaves and served with rolls and additional grapes on the side.

My Company Chicken Salad

3 large chicken breast halves with skin on, bone in.
Lawry's Seasoned Salt
1 cup bias cut celery, with some leaves if possible.
4 bias cut green onions (some green)
1 cup frozen peas, rinsed in warm water to defrost
2 cups seedless red grapes, cut in half
1 cup of sliced or slivered almonds
Dressing~~
1/2 cup Best Foods Mayo (Hellman's)
1/2 cup sour cream
1 Tbs. Chicken bullion granules
1/2 tsp. fresh ground black pepper
1/2 tsp. Accent

The most important part of this recipe is the preparation of the chicken.
Sprinkle the breasts liberally with Lawry's Seasoned salt, and BROIL the breasts till juices run clear. Allow them to cool. Finger shred the chicken meat, along with the crispy skin and discard the bones or save for stock. Combine with the rest of the ingredients and toss with the dressing. This is even better done ahead and served the next day.

Diced cooked chicken, chopped celery, drained crushed pineapple, chopped dried cranberries, olive oil mayo, paprika powder (the more the better), black pepper, celery seeds; mix til well combined. My favorite recipe. Everyone has their version.
