My potato salad

I love potato salad. Right now it feels too hot to boil potatoes.

I cube them before boiling. Saves time. Oh, that is another thing about hubby. He likes the potato salad in cube form and not mashed.

My grandma made American and German potato salad loved them both. Don't know that I've ever made either. May have to give it a try, it is summer time.

Since there are literally thousands of potato salad recipes, you may have to try a few before you find one you love.
Believe me, it's worth the effort. I love my personal recipe posted above.

This is my secret German potato salad.

I usually add a slice or two of crispy bacon crumbled and a splash of apple cider vinegar.

Reading all the recipes I was struck by @senior chef 's use of Miracle Whip. That may be the key difference in several of my mother's recipes and mine. She loved it and I don't think I've ever bought it!

Miracle Whip always seemed like the cheap substitute to me, although I've seen it specified in recipes. So I suppose it is better suited for some things. I've got to try this Hillmans that everyone talks about. I like mayo better than "whip", but the stuff stays in the frig for so long that I'm afraid the eggs will go bad. So I make do with Miracle Whip, and what's even more hair raising, it's Miracle Whip Light.

I think that's the thing that makes it so distinctive, and I do like it very much, but the other kind of potato salad I like even more. It always reminds me of a summer picnic while sitting on a blanket in the grass.

Some where I read the white vinegar kept boiled potatoes from getting soft.

When I used to make potato salad when the kids lived with us,,my potato salad was more like Mashed potato salad!
Fortunately they were hungry and ate it. .

We like either cold potato salad or the German potato salad, that I make.

I've got to try this Hillmans that everyone talks about.

In one part of the country it’s Hellmans; in the other it’s Best Foods Mayonnaise. Maybe you have tried it and didn’t know.
