My recipe for fresh sardines

I know, not everyone's cup of tea but, we like them.

Once they are ready to cook, mix 1 tbsp each of olive oil and lemon juice, drizzle it over the fish and sprinkle a little sea salt. In the large pan I use for stir fries, I put the sardines skin side down, add some chopped garlic and red peppers, cover with the lid and, while it's sizzling away for 3-5 minutes, I toast some bread.

Pop the sardines on the toast with the cooked garlic and peppers and drizzle a little of the olive oil and lemon juice on top. I usually make a little salad to go with it or, if we are hungry enough, pop some fries in the air fryer :)
