We always had a mile-high lemon meringue pie and a coconut cake for Easter.

These days it's likely to be a cheap and flashy 3 ingredient lemon parfait.

I'd rather not have meringue but whipped cream instead.

When my daughter was visiting a couple of weeks ago, she made a great lemon meringue from scratch using all fresh ingredients. (she calls it a "meringy pingy").
