Need A Recipe For Cucumbers With Vinegar Or Whatever Way You Like Them.

Neighbor told me that's how she likes them but then went on vacation. Never heard of this and several cookbooks do not show this.

I usually just slice, salt and pepper or drizzle with a little bottled dressing.

Maybe stuffed for appetizers?
 

Google cucumbers with vinegar. While googling look for cucumbers with raw onion & sour cream. Can change up the vinegar with fig vinegar, raspberry white wine vinegar, white vinegar, apple cider vinegar. Didn't like the balsamic vinegar version.
 
I like cucumbers. I peel the skin off 2 cucumbers, slice them up, and put them in a large bowl with about 4 tablespoons of vinegar, an equal amount of salad oil, some salt and pepper, then fill the rest of the bowl with water. Then, I put the bowl in the fridge, and let the ingredients soak in overnight, and by the next day, I have plenty to snack on.

We like them with garlic slices, a pinch of salt, pepper and sugar to take off the bite. Another version uses cauliflower, carrots, radishes, and hot peppers added.

I can't eat them, (cukes or vinegar)
therefore I wouldn't personally know :rolleyes:;):LOL:

However, I thought I'd add a post, anyway....:cool::giggle:

I have known many New Englanders who have loved vinegar on their sliced cucumber, and some who serve it and love it themselves, the vinegar on a mixture of the raw salad type vegetables, including cukes and peppers (green or red or both) and tomatoes.

I have also seen sometimes, those longer thinner ridged type of cukes, that are tasty, too, and a bit easier for some people to digest.
 
I don’t have a recipe but I usually use rice wine vinegar, a little olive oil, an even smaller bit of oyster sauce, salt, pepper , and onion powder. Since I’m growing basil, I might add that. I might add to the sliced cucumbers some sliced radish, celery, onion and a diced tomato. Refrigerate.
Makes a nice side dish and ingredients, with the exception of cucumbers which are a must, are flexible.
 
I use English cucumbers. Sliced thinly on a mandolin with thinly sliced onion. Sprinkle salt on them and put them on a dish towel to dry. The dressing is rice vinegar and sugar to taste. After cucumbers are dry, mix with dressing and let them marinate overnight in the fridge.
 
I now use those "baby" cukes. Thin, tender skin , no wax, no need to peel. Sprinkle with:

I like the seasoned kind... it has some salt.
Once in awhile, I'll sprinkle them with a bit of dried dill weed
 
I just slice with a box grater and use Italian (liquid) dressing.
usually, have as appetizer before evening dinner/supper
Simple, easy,..... delicious!

 
Here's my recipe for cucumber salad:

1 large cucumber – pared
1 cup sour cream
1 tbsp. chopped onion
3 tbsp. vinegar
¼ tsp. salt
⅛ tsp. white pepper (can use black pepper if needed)

Thinly slice cucumber. Combine remaining ingredients and pour over cucumbers.

Marinate at least 30 minutes. Springs of fresh dill can be sprinkled on top. Serves 4.

That's how I do it, too, but without the water. I add a few dill seeds if I have them.

That sounds scrumptious to me.

This is a wonderful cucumber salad & dip - it can easily be doubled if desired.

4 ounces (small pkg) cream cheese, regular or light
1/2 cup Hellmann's mayonnaise
1 medium cucumber, peeled, seeded and chopped
1 tablespoon sliced green onions
1 teaspoon lemon juice or vinegar
1 teaspoon fresh dill or 1/2 teaspoon fried dill weed
1/4 teaspoon hot sauce (optional)

In medium bowl, mix cream cheese until smooth, stir in
all other ingredients. Cover and refrigerate until chilled.
Serve with fresh vegetables, crackers or chips.
