Old-Fashioned Cabbage Casserole

This casserole used to turn up quite often as an inexpensive side dish, but these days I serve it as a main dish.

The recipe is just a guide, use what you have.

Sometimes, I use cream of chicken or tomato soup and a bag of coleslaw mix, reduce the amount of butter, use an egg instead of the mayonnaise, top it with French's crispy onion rings, crushed potato chips, parmesan cheese, etc...

Yum! Looks so good and easily changed up for different ways of eating.
 

I like to keep cabbage in the fridge. It lasts for a long while and can be added to many casseroles and soups. Especially good in spicy beef vegetable soup. Of course, my favorite is cole slaw in the summer!
