….though we sometimes have it for dinner too! It’s a take on avocado toast, but there are more layers so it’s more filling.
Ron cooks us a quick hot breakfast during the week, (usually just eggs — poached or fried, with toast) but on the weekends I typically do a more elaborate brunch meal…French toast with fruits, lox and bagels, pancakes and eggs, etc. Or this one.
Toast, a layer of sliced avocado, spinach that is cooked just enough that it’s wilted, a few rounds of very thinly sliced onion, a slice of tomato, and everything topped with an egg. I very lightly season each layer with fresh ground pepper (we don’t use salt) and for Ron add bacon and sausage on the side.
It’s a very filling meal, so we usually eat it as brunch on weekends which holds us till dinner.
